Oatmeal Blueberry Pancakes are perfect for
breakfast! Oatmeal pancakes are good all year around and the blueberry version
makes them even more delightful. The high fiber and antioxidants in blueberries
makes them a healthy choice. When you put some syrup or other topping on them,
your taste buds will be singing! This is a wonderful family food! Your family
will love them, and they are very nutritious, easy, and inexpensive!
Ingredients
3/4 cup old-fashioned oatmeal
1 cup water
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon of baking soda
1/3 cup honey
1 egg, slightly beaten or fat-free egg beaters or
egg white equivalent
3/4 cup fat-free (skim) milk
1/4 cup of olive oil or coconut oil
1/4 cup unsweetened applesauce
1 teaspoon of vanilla extract
1 cup fresh or frozen blueberries
Plain yogurt, if desired (optional)
Stevia (optional)
2 tbsp ground flax seed (optional)
1/8 tsp nutmeg (optional)
Maple syrup or other topping
Directions
Step 1) Combine the oatmeal and 1 cup of water. Cook
it in either the conventional way or use a microwave method according to
package directions.
Step 2) Mix all the dry ingredients in large mixing
bowl. Mix flour, baking powder, baking soda,salt, and cinnamon in a bowl.
Step 3) Mix the egg, honey, olive oil, vanilla extracts,
applesauce, and milk in another bowl. Add the flour mixture to the egg mixture;
stir until well blended.
Step 4) Stir the cooked oatmeal into the mixture.
Then Stir the blueberries into the mixture.
Step 5) Put a layer of olive oil in the griddle or
flat pan and heat it on the stove at medium high.
Step 6) Pour a small ladle of batter into the pan.
Top each pancake with extra blueberries if desired.
Step 7) Cook your pancake on medium heat until small
bubbles become visible and the tops are just covered with small bubbles.
Step 8) Use a spatula to see when the pancakes are
light brown on the underside side. When they are, flip them over using the
spatula.
Step 9) Cook for another few minutes until the
pancake is lightly browned on the other side.
Step 10) Remove your pancakes from the griddle and
serve them for everyone to enjoy!
You can also use banana if you desire, 1 large
mashed up should do it! Add it to your ingredients in step 3.
Grow your own blueberries
You can grow your own blueberries by purchasing
pesticide free plants from a reputable source. A very good plant that produces
true wild blueberries that are well suited for use in baking and with high
antioxidant levels is Rubel. You can use these blueberries fresh and freeze any
that are left over for use later in the year. This will provide you with a
ready source of very economical blueberries. With the price of food on the
increase for the foreseeable future this will make a good investment. It is a good
idea to have at least two plants.
Blueberries are one of the best cultivated fruits
for the home garden. The plants are beautiful and blend well into the
landscape. The white flowers in spring are followed by big crops of delicious
blueberries and in the autumn there is lovely foliage. From a nutritional stand
point blueberries offer more antioxidants to support good health than any other
fruit.
